Quintonil Diez celebrates with leading international chefs

The restaurant Quintonil turns a decade and celebrates it by carrying out various experiences for ten months of 2022. Casa Madero, Tequila Reserva de la Familia and Volvo are present in the experiences and are an important part of this celebration.

Last June 18th, the Quintonil family celebrated its sixth edition with acclaimed French chef Julien Royer, who oversees the Odette restaurant in Singapore. Alejandra Flores, Jorge Vallejo, and Julien Royer began the tenth anniversary experience with an appetizer: “Odette Martini”, made from Tequila José Cuervo Reserva de la Familia Platino, St-Germain liqueur and lemon.

Subsequently, Chef Royer made a series of entrees that including an onion tartlet with licorice and coffee, kampachi taco with miso and shiso, as well as gourmandise avocado with grapefruit and dill. This exclusive and unprecedented menu continued with the main dishes: rockot with tree tomato, purple green beans, and turnip, ending with a duck glazed in yuzu, peach and sake.

Chef Jorge Vallejo mixed Mexican cuisine with Royer’s gastronomic proposal and offered diners an escamoles tart and corn chawanmushi with enoki mushroom, marrow and macha sauce. The grilled sweetbread with morita chilli, Jerusalem artichoke mole and callo de hacha was paired by “Quintonil Diez” label of Casa Madero, limited edition of 1957 bottles, Cabernet Franc, Malbec and Petite Syrah grapes aged from 18 to 24 months in barrels.

To finish the menu, Julien offered a Yucatecan lime tart, dedicated to the Yucatan peninsula, wich gave way to panna cotta mamey with “Tequila reposado José Cuervo Reserva de la Familia,” authored by Jorge Vallejo.

Chef Julien Royer has managed to conquer Mexican palates, just as he did with Singaporeans by mixing classic French cuisine with Southeast Asian ingredients. His restaurant is located in the National Gallery of Singapore and is decorated with contemporary art installations curated by artist Dawn Ng, as well as occupying the 8th place in “The World’s 50 Best Restaurants.” On 22nd January, chef Riccardo Camanini and his brother Giancarlo visited the restaurant with a Northern Italian gastronomic proposal. Ristorante Lido 84 was awarded its first Michelin star just seven months after opening and is currently ranked 15th in “The World’s 50 Best Restaurants.”

On 12th February, chefs Daniela Soto -Innes- best female chef in the world and Blaine Wetzel visited Quintonil’s kitchen to create a gastronomic proposal with what they have in their environment. The Willows Inn is located on Lummi Island, USA and is currently the number one restaurant in North America.

The 9th of March is the date that Quintonil was born, and the celebration couldn’t be better than with the Swiss chef Andreas Caminada who prepared spectacular dishes of modern Swiss gastronomy and currently his restaurant Schloss Schauenstein in Füsternau has 3 Michelin stars. The fourth event, April 2nd, oversaw the Austrian chef Heinz Reitbauer, who has won two Michelin stars at the restaurant Steirereck, in his dishes he mixes traditional and modern gastronomy and therefore occupies the 12th place in “The World’s 50 Best Restaurants.”

On May 28th, it celebrated its fifth edition with the presence of Junghyun Park, one of the most acclaimed chefs in New York City thanks to his projects Atomix and Atoboy, where he exhibits a vibrant proposal of Korean cuisine.

Intimate French and Asian culinary traditions are mixed to taste the menu created by chef Julien Royer who leaves Singapore and his restaurant Odette with three Michelin stars to bring his flavors to Quintonil this June 18th.
